First, this is the location with the music. Grand Ole BBQ has three outposts — the original in North Park, this one, and a stand at Petco Park — and live music only happens here. The kitchen's own guidance is half a pound per adult as a meal. Order that way and you'll do fine. Order like it's a chain restaurant and you'll either go hungry or take home four pounds of brisket.

What to Order at Grand Ole BBQ

The meat, by the pound. The smoke times tell you everything about the seriousness here:

  • Brisket ($8.75+ per pound). Seasoned with salt and pepper only and smoked for 15 hours. That's Central Texas orthodoxy — no sauce in the rub, no shortcuts, nowhere to hide. It's the order.
  • Pulled Pork ($7.00+). Pork butt with house dry rubs, also smoked 15 hours.
  • Spare Rib, St. Louis cut ($7.50+). House rub, four hours in the smoke, roughly four to six ribs per pound.
  • Tri Tip ($9.00+). Bottom sirloin, smoked two-plus hours and served mid-rare with house chimichurri — the most Californian thing on a very Texan menu.
  • Texas Turkey ($8.00+). Breast, salt and pepper, five to six hours. Made with butter, so not dairy-free.
  • Texas Hot Link ($8.00+). Pork-and-beef blended sausage.

The sandwiches, if you'd rather not do math. All come on a warmed bolillo roll with a coleslaw garnish and sauce on the side:

  • Brisket Sandwich ($17.00) — a chopped mix of lean and fatty.
  • Texas Cheese Steak ($19.00) — chopped brisket with cherry peppers, grilled onions and queso on the side. The one you'll think about later.
  • Tri Tip Sandwich ($18.00) — medium-rare with chimichurri.
  • Hot Link Sandwich ($10.00) — the cheapest real meal here.

And the side that's actually a main: the Charro Beans ($6.00+) are pinto beans cooked with tomatoes, onion, garlic and jalapeños — with chorizo, hot links and brisket mixed in. A side dish containing three smoked meats is a statement of intent. Get it.

The rest of the sides hold up too: mac and cheese ($6+) with cavatappi in American and Gouda, pot salad ($6+) with red skins and hard-boiled egg, green beans ($7+) finished with parmesan and lemon zest, and two slaws — traditional, or a spicy version with chipotle mayo and cilantro.
