The Beer Garden Escondido Built From 472 Stones, and It Just Turned Twenty

Bree PartingtonNov 4, 20267 min.

Four hundred and seventy-two fans paid to put their names in the wall. Twenty years later it's an acre of garden, a sustainability award almost nobody has, and a short rib braised in Arrogant Bastard.

Overview

Stone Brewing World Bistro & Gardens opened in Escondido on November 1, 2006.

Which means it turned twenty last Sunday.

It is 8,500 square feet of dining room opening onto a one-acre beer garden, and if you've only ever had Stone beer out of a bottle, the place it comes from is worth the drive on its own.

Here's the detail that tells you what kind of operation this is. On June 11, 2006, while the bistro was still being built, 472 people paid to sponsor a stone in the wall connecting the brewery to the patio. The beer brewed to mark it — StoneWall Ale — raised more than $85,000 for charity.

That wall is still there. You can walk along it.

The Gardens

One acre, and it is the reason to come.

Water features, open-air patio, and enough space that a busy Saturday doesn't feel like one. Stone describes it as "a destination setting that feels like a serene escape in Southern California," which is marketing language that happens to be accurate.

And it has a credential almost no restaurant garden anywhere has.

On September 17, 2012, the Sustainable Sites Initiative named the Escondido bistro and gardens one of only eleven projects certified worldwide for sustainable landscape design.

Eleven. Not eleven restaurants — eleven projects of any kind. That's a genuinely unusual thing for a brewery beer garden in North County to be carrying, and Stone barely mentions it.

The Food

The kitchen cooks with the beer, which sounds like a gimmick and mostly isn't.

The dish to order:

  • Beer Braised Short Rib — $32, braised in Arrogant Bastard Ale

That's the one. A big, dark, aggressively bitter ale is exactly the right braising liquid for short rib, and it's the dish on this menu that couldn't exist anywhere else.

The rest of the entrées:

| | |

|---|---|

| Steak Frites | $28 — flat iron, garlic fries, bordelaise or peppercorn |

| Blackened Salmon | $24 |

| Aleppo-Honey Grilled Chicken | $23 |

| Stone's Fish & Chips | $21 — Buenaveza "Ensenada Style" beer batter |

| Rigatoni Bolognese | $19 |

The burgers, all served big:

  • Centennial Burger — $18.50 — bacon, IPA beer cheese, onion strings
  • Stone Wagyu Luxe Burger — $18 — marrow butter, onion spread, Gruyère
  • Mediterranean Falafel Burger — $16 — vegan brioche bun, vegan tzatziki

Marrow butter on a wagyu patty and a fully vegan falafel burger on the same short list is a kitchen covering its bases properly.

To start:

  • Yellowfin Ahi Poke "Nachos" — $17
  • Indian "Chaat" Street Nachos — $14.50
  • Burrata & Tomato Antipasto — $14
  • Kung Pao Crispy Brussels Sprouts — $14
  • Stone Wings — $14 — buffalo with blue cheese, or chili crunch "bang bang"
  • Stone Delicious Bavarian Pretzel — $13
  • Stone Mac N Cheese — $9.50

Sandwiches run $18 to $23 — the Santa Maria Tri-Tip at $23, Birria Melt and Chicken Parm Supreme at $18. Salads and bowls are $14 to $19. Dessert: crème brûlée $10, sticky toffee pudding $9, churro donut $8.

One thing to ask about when you order. There's a street taco section with six options — carne asada, carnitas, chicken tinga, crispy fish, mushroom asada, and birria beef queso. Only the birria has a price printed ($16 for three, with consommé for dipping). The other five have no price at all, on the website and in the official PDF menu. Just ask.

The Beer

Stone's flagships are all here and all on draft:

  • Stone IPA, 6.9% — the West Coast IPA, described by the house as citrus, tropical, piney
  • Arrogant Bastard Ale, 7.2%
  • Delicious IPA, 7.7%
  • Buenaveza Salt & Lime Lager, 4.7%

Beyond those, the hop list is deep — Delicious Hazy, Chill Villain Cold IPA, ///Fear.Movie.Lions Hazy DIPA at 8.5%, a 30th Anniversary Double IPA at 8.5%, Flying Blind at 9.0%, Delicious Double at 9.4%, plus a rotating Hop Engineer series brewed with single hop varieties.

The one marked as a brewery exclusive: Stone Enjoy By Series: Freaky Fresh IPA, 9.4%. That's the only beer on the list flagged as available only here, so if exclusives are why you're driving up, that's the one to ask for.

There are guest taps too, and the selection is unusually generous for a brewery taproom — Coronado, Modern Times, Pizza Port, Mother Earth, Eppig, Fall Brewing, Julian Hard Cider and others pouring alongside Stone's own.

How many taps total is a question the website answers three different ways — the page copy says 36, the list on that same page shows 24, and the dedicated draft page shows 38. Call it "somewhere in the thirties and more than you can get through." Beer prices aren't published anywhere, so bring a card.

The Tours

This is the part people don't realise you can just do.

Public tours run every day at 2:00 p.m. and 4:00 p.m., capped at twenty people:

  • $15 — adults 21 and over with valid ID. Includes a souvenir tasting glass and four 4oz samples
  • $5 — for anyone not drinking. No glass
  • Children 12 and under are not allowed on the tour

Ten spots are bookable online and must be reserved at least 24 hours ahead and paid for in store; the other ten are sold in store on the day. Check in no later than fifteen minutes before — they leave promptly and latecomers may not be admitted.

Private tours run Monday to Friday at 12, 1, 5 and 6 p.m., $20 per person, minimum one week's notice, up to twenty guests. Those include guided tastings of wort, post-fermented beer and freshly packaged beer — and a souvenir glass with a 5oz pour of the latest One Batch Dispatch release.

Practical requirements for any tour: closed-toe shoes, hats, eye protection and ear plugs. Stone supplies the ear plugs and eyewear. No drinks on the tour. And note — service animals are not permitted on the brewery tour, which is unusual and worth knowing in advance.

  • Reservations strongly recommended — via OpenTable

Good to Know

  • Book a table. Stone's own words are that they "very highly recommend making a reservation."
  • The short rib is braised in Arrogant Bastard. Order it.
  • Tours are $15 and run twice a day — a genuinely good add-on if you're driving up anyway.
  • Ask the price on the street tacos. Five of six aren't printed.
  • Dogs are fine in the garden, not inside, and not on the tour at all.
  • Parking isn't published. It's a large purpose-built brewery campus, so it shouldn't be an issue, but we'd rather say so than guess.
  • Live music runs most days — see below.
  • Groups of 10 to 300 can be accommodated for private events; contact is in the notes.

Live Music

There's music most days, but it's booked show by show rather than on a standing schedule. In the week we looked, that meant Mike Myrdal on Saturday morning, Sean McCole on Sunday morning, and then an evening act every weekday — Julian Jaimie, Shay Skylar, Blaise Guld and Rafi Levi.

Weekend sets have started at 11 a.m. and weekday sets at 5 p.m., though one Thursday ran at 6:30. Check their events page before you plan around a specific act.

Worth noting that Stone's recurring programming — trivia nights, the Stone Run Club — runs at their Pasadena, Kettner and Liberty Station locations, not Escondido. Escondido is the garden and the brewery.

Why It's Worth It

Because it's the real thing, and most brewery restaurants aren't.

Stone was founded in 1996 by Greg Koch and Steve Wagner in a San Marcos warehouse. They moved into a purpose-built Escondido facility in December 2005 and opened the bistro the following November. Everything you're drinking was made on the site you're sitting on.

And the site itself is the argument. An acre of garden with water features and a sustainability certification shared with ten other projects on earth, a wall built from 472 stones that fans paid for, and a kitchen that braises short rib in the brewery's most famous beer. None of that is a taproom with tables.

It's about forty minutes from central San Diego, inland on the 15. Go at the end of the afternoon, do the 4 p.m. tour, and eat in the garden after.

If you're making a North County day of it: our guide to Firehouse Que & Brew in Fallbrook covers barbecue about half an hour north, and Palomar Mountain State Park is a reasonable drive east if you want to earn the beer first.
