The Plot: A Zero-Waste Vegan Restaurant That Grows Its Own Garden Across the Alley

William RouttOct 20, 20265 min.

A zero-waste vegan restaurant where the crab is lion's mane mushroom, the garden is across the alley, and the business plan was drafted over a lunch break at a conference.

Overview

Jess Waite was at a zero-waste conference in 2017 and drafted the business plan over the lunch break.

That's the origin story in one line, and it tells you what kind of restaurant The Plot is. She and her partner, chef Davin Waite, opened it in South Oceanside with a premise most restaurants treat as a marketing line and this one treats as the operating constraint: plant-based, and as close to zero waste as they can manage.

Their own description of the approach: "a plant-based, zero-waste approach, focusing on the total utilization of fresh, boundary-bending homegrown ingredients." And a line they clearly mean: "the plot is more than just a restaurant - it's a movement."

The name has two sources. It comes from the small gardens Jess and her siblings had growing up, and the allotments Davin's family kept in England when he was a child. It also, they say, refers to "the master plan of creating a healthier, more respectful, and more delicious future."

It has worked. Tasting Table ranked it #2 on its list of the 20 best restaurants in San Diego — not the best vegan restaurants, the best restaurants. It was San Diego Magazine's Critic's Choice Best New Restaurant in 2020, named one of the best new restaurants in the US by Vegetarian Times in 2021, and California's 38th District Business of the Year in 2023.

Here's the one thing to understand before you go, because it changes how you read the menu.

Almost nothing here is a substitute bought from a supplier. They make the fake meat themselves, from scratch, out of things you'd recognize.

  • The "cräb" is primarily lion's mane mushroom, with a mayo made from local organic tofu
  • The "chickën" is local organic tofu, from San Diego Soy Dairy
  • The "spicy tüna" is garbanzo beans and house sriracha
  • The sausage, ground "beef," chorizo and loaf are made from lentil and wild rice

Their own line: "we make everything in-house!" — with a short list of honest exceptions: some bread, some spice mixes, and the tofu, which is local and organic.

So don't read it as a vegan menu with swaps. Read it as a kitchen that builds its ingredients from the ground up — which is also why the zero-waste part works. If you're making the component, you control what's left over.

What to Order at The Plot

A caveat worth stating plainly: The Plot doesn't publish prices. Their menus are posted as images on their website, and the ones I could reach didn't load. The dishes below are named in their own words; call (442) 266-8200 or check OpenTable for current pricing.

What they describe:

  • Cashew burrata with red wine, poached pear and sourdough focaccia
  • Lion's mane cräb roll, topped with spicy mayö and sweet citrus — the dish that best explains the kitchen
  • Spicy tüna, made from garbanzo beans and house sriracha
  • The house charcuterie — sausage, ground "beef," chorizo and loaf, all built from lentil and wild rice
  • An amuse bouche, which they describe as "a gift from the kitchen that we share with each guest at the beginning of their dinner" — a detail that tells you the register they're aiming for
  • There are dinner and lunch tasting menus, bookable through OpenTable

On dietary needs: everything is plant-based. They also say there are "quite a few" gluten-free and soy-free options, though they don't publish a list.

The Zero-Waste Part Is Real

Most restaurants that claim this mean they compost. The Plot's published list goes further:

  • There's a garden, accessible from the parking lot across the alley, managed by their Plot Garden Project team — a separate non-profit.
  • Water from the table carafes is saved to water the gardens.
  • Candles are zero-waste and palm-oil free.
  • Anything that can't be composted or recycled goes into a TerraCycle box.
  • Takeout materials are biodegradable and most will break down in a backyard compost.
  • They run a reusable takeout container swap in partnership with ReVessel.
  • Much of the building is repurposed, including wood salvaged from mushroom-growing operations.

And a line that does them credit: "we are not perfect by any means, but strive to learn and evolve."

The Takeaway

Book dinner, order the lion's mane cräb roll, and sit outside with the dog.

What makes The Plot worth the drive isn't that Oceanside has a good vegan restaurant. It's that this one is doing something harder and more interesting than being vegan — it's trying to run a restaurant where almost nothing is bought in and almost nothing is thrown away, and it's good enough at the food part that a mainstream list put it second in the county without a qualifier.
